When my Gorgeous Man and I travel, we want to enjoy a super-delicious, gluten-free (and dairy-free) treat. But, finding something yummy to eat that is both gluten and dairy-free, is challenging. And it's even more challenging when we're in an unfamiliar place! So, I decided to make some high protein, high fiber, absolutely delicious, and (quite gourmet) Hazelnut Peanut Butter Muffins and carry them with us in my tote bag on the airplane.
Yum. Enjoying a Hazelnut Peanut Butter Muffin high above the clouds is a luxuriously-delicious way to travel. In fact, the moment seemed "magical!" But part of the magical feeling could have been because my Gorgeous Man and I were going to visit an enchanted place where dreams come true... Oh! You guessed it! DISNEYLAND!
But YOU don't need to travel to Disneyland to create a magical moment. You can create a "magical muffin moment" this very minute. ENJOY!
Hazelnut Peanut Butter Muffins
Fabulous Hazelnut Peanut Butter Muffins are easy to make (gluten and dairy free) muffins that travel well and make every occasion taste magically delicious!
Line muffin pan with 12 cupcake/muffin papers
Preheat oven to 350 degrees Fahrenheit
In a large mixing bowl stir together:
1 cup hazelnut flour (I used Bob's Red Mill)
3/4 cup ground golden flaxseed
1/2 cup coconut flour
1 1/4 teaspoons baking soda
1/4 teaspoon sea salt
Add the following ingredients. Mix at low speed, then on medium speed for one minute or until the dough is smooth and combined:
1 cup peanut butter - I use organic peanut butter, just peanuts and salt
1 cup milk of your choice (I used refrigerated almond milk this time)
2/3 cup honey
1/3 cup good tasting olive oil
1 tablespoon blackstrap molasses
3 eggs
2 teaspoons pure vanilla extract
Spoon the dough evenly into your lined muffin/cupcake pan. The dough will come all the way to the top . Bake muffins for approximately 22-25 minutes. Insert a toothpick into a muffin; when it comes out clean they are done. Let the muffins cool.
Note: Hazelnut Peanut Butter Muffins are a variation on my "Bad Boy" Peanut Butter Chocolate Chip Muffins. My Gorgeous Man and I LOVE these muffins and we hope that you love them, too!

I am psyched to get started on some of these yummy recipes. Where do you buy most of your GF ingredients, especially the less popular ones such as hazelnut flour or ground golden flaxseed? I've shopped at the common places: Whole Foods, PPC, QFC, etc but I haven't come across a place that has the less common ingredients. Plus, I'm not working right now so I'm on a somewhat tight budget at the moment and, as you know, GF food isn't exactly cost efficient so if you know of any affordable stores with quality products please share your recommendations. :)

Yes, it can be quite an adventure trying to find gluten-free ingredients! For instance, our local Whole Foods Grocery Store has their gluten-free baking ingredients in THREE different places.
1) In a separate "gluten free" section in the front corner of the store.
2)The baking section
3) But just to make things even more exciting - I've found things like "potato starch" waaaaay down the row in the baking section, away from the other flours, next to the cocoa and chocolate! (I'm not sure why they do it that way.)
If you can't find something be sure to ask someone at the store; it will save you time and frustration! Oh, and if you just want to purchase an already baked gluten-free item ~ well those things are in ANOTHER part of the store... just thought I'd mention that.
COST: Yes, gluten-free flours are more expensive than regular wheat flour. And it was a "culture and price shock" for me also, when I first became gluten-free! However, on the bright side; you will have fewer doctor bills because you will feel so much better! Hooray!
Nut Flours: If you want to purchase one nut flour, to experiment with and to keep the cost down ~ I would recommend Almond Flour. Almond Flour can be used in many different recipes. Hazelnut flour or almond flour can be used interchangeably; but the flavor will of course be different.

Your muffins recipes are THE BEST; I think I am becoming addicted to trying each of your muffin recipes. They can easily pass for the best of wheat flour muffins. From the Blueberry recipe I have made Date, Orange, and Nut as well as Cranberry Orange with nuts and cinnamon sugar[Penzey's, of course,on top. SOOOOO good.

Flaxseed Meal Tummy Problems: From what I have read, flaxseed is an extremely healthy and safe food for most people. However, some people do have digestive issues with flaxseed meal (ground flaxseeds) because it is so high in fiber.
What most doctors recommend is to start out with a small amount of flaxseed, then slowly increase the amount each day, so your body can get used to the higher amount of fiber. Most doctors and health professionals also recommend drinking between 8 - 10 glasses of water when consuming high fiber foods.
