I checked ALL my secret stash places for chocolate... inside our big stainless steel soup pot (securely covered with a lid), inside an empty tea tin labeled "Smoked Liver Tea" (trust me, no one EVER looks there) and behind the silverware caddy, but alas; no chocolate chips were anywhere. How could I make Chocolate Chip Cookies without any chocolate chips?! That was when panic set in.
Feeling quite alarmed, I started searching for chocolate.... ANY chocolate... and that's when inspiration came. I vaguely remembered something... didn't I hide a dark chocolate bar behind the dried prunes, figs, dates and raisins? Ah-ha! "There you are!" One half of a chocolate bar! "Oh my little beauty!" I gave the remnant of the chocolate bar a kiss. YES!
I broke up the chocolate bar on top of the cookie batter, but it looked sad and lonely; so I added raisins. Ahh... that looked better. But something was missing... Hmmm... toasted walnuts could make these cookies SING and DANCE. I added a handful of Perfect Toasted Walnuts, stirred everything together, spooned the dough on the prepared pan and threw them in the oven.
When I pulled the cookies out of the oven they looked luscious. The addition of the walnuts made them quite a bit thicker. Impatiently I waited for the cookies to cool, ever so curious about the texture. Finally it was time to try one.
Oh my gosh! WOW! These gluten-free Chocolate Chunk Cookies were DELICIOUS! I wasn't originally sure about adding raisins since I'm a bit of a purist when it comes to chocolate, but I do love Dark Chocolate Covered Raisins so I figured the cookies would be quite good. However, I wasn't prepared for the blast of flavor from the combo of the buttery, chewy-crunchy cookie, the dark chocolate chunks, toasted walnuts and raisins. Well all I can say is, these cookies are ADDICTIVE!
Chocolate CHUNK Cookies
Ingredients and Directions:
Make "I Love These Chocolate Chip Cookies" as directed, but instead of adding chocolate chips, stir in:
3 - 4 oz. dark chocolate broken into chunks (or use semi-sweet chocolate chunks)
1/3 - 1/2 cup raisins
1/2 cup, coarsely chopped Perfect Toasted Walnuts
