Gimme Gluten Free is Famous!


Last week I had my very first newspaper interview!   Wow I was PUMPED!  But as soon as I found out about being interviewed by Christopher Huber of the Sammamish Review, so many questions came into my mind - but the biggest question of all was: What gluten-free recipe should I make? 

Chris was going to video-tape me and also write an article for the newspaper as I made (fabulous) gluten-free delicacies.   Should I make Ultimate Chocolate Lava Cake or Blissful Blueberry Muffins?  And what about Carrot Cake with Cream Cheese Frosting?  "People went back for thirds at the wedding," my Gorgeous Man reminded me.   Or should we do a main dish?  Aaaugh! 

These questions were driving my Gorgeous Man and me nuts; not to mention we were perpetually hungry after these discussions! 

"That's IT!  I've made my decision." I announced.  "I'm going to  make Gimme Gluten Free Beer Bread." I love mini-loaves of Gimme Gluten Free Beer Bread because they are perfect for toast and little sandwiches.  This bread is super-easy to make and it tastes better than any of those expensive gluten free breads on the supermarket shelves!
  
But then I felt we simply HAD to have gluten-free Heaven Sent Waffles because those are amazing.  Light, crispy... plus breakfast is one of my favorite meals; right up next to lunch, second lunch, dinner and snacks!
Fine.  It was settled.  But no!  No, it was NOT because another thought hit my brain...

CUPCAKES!  We MUST have gluten-free cupcakes!  I LOVE CUPCAKES!  And I had just figured out (after much trial and error) how to make the softest, most yummy gluten-free Very Vanilla Cupcakes with Creamy Chocolate Fudge Frosting.  So fine... we'll make those, too!  

Back to the Newspaper Interview:  When reporter/photographer Christopher Huber came over for the interview, he was kind and gracious and put me at ease at once.  And when I told him about my wonderful neighbor, Debra Gibbons, who helped me get on the road to health; he interviewed her, too!  (Debbie rocks!)  It was such a fun experience!  I just hope that through this interview more people can enjoy a gluten free diet and be helped and encouraged!  Sometimes we need a hug and a good word of encouragement and... some great recipes! 

Well, now that I've had a taste of being a "famous celebrity" well, okay... my one minute of fame in my neighborhood...  I think I'll celebrate with a cup of hot tea!

Congratulations Lynn. I read the article in the Sammamishs Review and thats how I found your website. I've been Gluten free for two months now, so I'm looking forward to looking through your site.
