This is a fantastic treat for everyone! It's "eye candy" but in addition, it's fabulously healthy! What a great treat for children, adults, and especially for us who can't eat gluten! This is simply a "match made in heaven!"

Going through your blog I spotted your gorgeous baby shower cake. My talented sister-in-law, Val, made the adorable baby shower cake! Lately, she has been using my carrot cake recipe for her wedding and baby shower cakes! (My carrot cake recipe makes two-eight inch round layers, or 1 ten inch and 1 six inch round layer or 1 9x13x2 oblong.)
Val usually makes two layer cakes, but single layer cakes are adorable also! The amount of cake batter you will need will depend on how big or small you make your cake.
You can use your favorite recipe for any vanilla or chocolate cake. You may even want to consider making the Scandinavian Chocolate Torte again (without the chocolate glaze if you want to cover the cake with fondant!) What fun!
